I like the way rice is served elegantly in restaurants . How can I make rice to put in bowls and then invert onto plate ?

Put the rice in a ramiken or small bowl and press it in,then unmold over the serving plate.

So I have tried and tried to make my vegetarian vegetable fried rice taste like what I get when I go out to eat but I cant figure out what they use? Tonight I tried to make rice and I used both Peanut oil AND sesame oil and they just dont taste like the restaurant!

Any idea on what it could be? Almost all the restaurants that make this veggie rice taste the same so it cant be some magical special ingredients only they know… do you have any idea what it is?

I’ve been searching for years for a recipe for the dark fried rice that is served in Chinese Restaurants in the Northeast. I’ve searched the internet and can’t find a single recipe that comes close. (in restaurants in other parts of the country serve a yellowish or off-white rice) HELP PLEASE!

cook you rice in water, beef bullion and a little soy sauce. cook your meat, veggies and scrambled eggs separately and when everything is done, mix it all together and serve.

Here’s what you do:

* Cook your brown rice and set aside. (Actually, if you do this the night before it’s better. If you do this…just take the rice out of the fridge about a 1/2 before you use it, if clumped then break it up with your hands and set aside for later use. )

*Cut up your produce relatively small & thin to reduce the cooking time.

*Heat up a large skillet & drizzle with peanut or veg. oil. Add in your vegetables and start to stir fry. Add in your egg and stir it around as it cooks. Add in the rice and stir fry until piping hot. Add in your seasonings. IF you can add in a little toasted sesame oil at the end, it will be very fragrant.

*It’s a basic recipe. There are many variations of how to make it…in the end if you enjoy it…that’s all that matters. That’s the beauty of fried rice…the possibilities are endless of what you do or don’t add.

Make sure you use deep oil, otherwise it won’t turn out deep fried. When the chicken floats to the top its done.
